This was nothing like the meal that Hope College claims is paella. This was the real deal and I was blessed to be invited to participate in the whole process and eat it afterwards. It was a fish paella so the base was a fish broth, but paella can also be made with any other broth as well. Our version contained chicken, artichokes, green beans, red peppers, onions, garlic, tomatoes, rice and shrimp. The paella spice (Colorante) they used gave the dish its deep yellow color and delicious flavor.
The key was to cook all of the ingredients in the right order so that they didn't burn, because once a raw ingredient was put in the pan it stayed in the pan until it was eaten.
The size of this pan was incredible and I was impressed by how much paella 11 of us could eat.
We ate this paella with a "sauce" called alioli which is made of garlic and mayonnaise. I would recommend eating alioli with anything, it is phenomenal.
